This Weekly Menu #16 features quick and easy dinner ideas for a busy week! From light yet flavorful lettuce wraps, to kid-friendly pasta dishes and Instant Pot comfort food – I hope this menu inspires you to cook something delicious.

What to cook this week?

Every time I put together the Weekly Menu post, I try to choose something for everyone: beginner cook as well as seasoned home chef. I think this menu has delicious meal ideas for everyone. The bonus dessert recipe is perfect for those spring get-togethers with family and friends!

Monday

We are starting the week off with one of my favorites, Chicken Lettuce Wraps! My teenagers can make them; they are so quick and easy!

Tuesday

If you want a dish with lots of sauce, look no further than this Butter Chicken recipe! You will need flatbread to soak up every bit of the sauce.

Wednesday

My recipe for Tortellini Alfredo is made for busy parents. I always have a bag of tortellini in my fridge, so when my schedule is full for the day, I know I can make dinner in 20 minutes!

Thursday

The Instant Pot is almost always on my counter, and today, I use it to make a delicious Beef and Broccoli dish! The leftovers are fantastic too!

Friday

This 6-ingredient dinner is one of the fastest you can make this week! The Honey Garlic Shrimp are so flavorful. Not a fan of shrimp, use chicken instead!

Saturday

Let’s slow down a little bit this weekend, turn some music on, and cook delicious food! Starting with the Instant Pot French Dip Sandwiches. Simply delicious!

Sunday

Finishing the weekend off with a fancy-looking salmon dish? Yes, please! The Dijon Salmon and Potatoes are baked in the oven on one sheet. Simple dish and minimal clean up is the theme!

Bonus – dessert!

Spring calls for bright flavors, especially when it comes to desserts! These Mini Lemon Cheesecakes are so easy to make and serve. Perfect little treat to share with guests!
