Make your menu easy this week with my simple and delicious meal ideas. This Weekly Menu #5 is packed with quick and flavorful recipes that will fit any budget and satisfy any tummy. I’ve also included a special Mother’s Day dinner idea!

This week, I’m back with easy recipes so we can all enjoy the outdoors! It’s sunny and warm here in Kansas, and my tomatoes are starting to pop up. I’m enjoying planting seedlings in raised beds and clay pots. So dinner time has to be mess and stress-free, and the food delicious.

Let’s not forget that this weekend is special – it’s Mother’s Day! I have an impressive yet easy-to-make dinner idea that will please anyone. Plus a bonus dessert recipe, of course! Check it all out below.

Monday

Skip the line at the takeout place, and make Ginger Soy Chicken in your kitchen! This easy dish is bursting with flavor. I serve it with rice and broccoli. The sauce is absolutely fantastic!

Tuesday

There is a big chance you have boneless chicken thighs in your fridge. If so, try this easy Skillet Chicken Thighs recipe! It’s the easiest dish to make with this cut of chicken. You can use leftovers to make other dishes, so win-win!

Wednesday

If you have ground meat, you have to try this easy Greek Meatballs recipe. They can be baked in the oven or fried in a pan. I serve them with garlic cucumber sauce. It’s delicious!

Thursday

Pull out the air fryer from storage and make this ridiculously easy dinner: Air Fryer Chicken Breast! Serve it with steamed or roasted veggies or just a simple salad. This dinner is light and full of flavor!

Friday

After a busy week, an easy pasta dinner sounds just what the doctor ordered. Quick, easy, filling, and delicious, this Chicken and Broccoli Pasta is a favorite among kids and adults.

Saturday

Since this weekend is Mother’s Day, let’s not limit it to one day but celebrate all weekend! Take your mom or a mother figure out to dinner today. And don’t forget the dessert, or make an ice cream stop at her favorite shop!

Sunday

This Sunday is Mother’s Day here in the United States! Let’s make a special dinner for the moms in our lives. This Instant Pot Tenderloin is crazy easy to make and perfect for this celebration. I serve it with mashed potatoes because the gravy is delicious served over them.

Bonus – dessert!

Perfect for the special day for a mom in your life: soft and fluffy Lemon Cake frosted with whipped cream. Easy to make and so delicious, it will surely impress her!
